Cream of vegetable soup with pumpkin seeds

Ingredients

  • 500 ml water
  • 200 g squash or pumpkin
  • 200 g leeks
  • 100 g celery root
  • 2 tablespoons chopped celery leaves
  • 1 Vegeta Natur beef bouillon cube
  • 2 tablespoons pumpkinseed oil
  • 1 tablespoon pumpkin seeds

Preparation

  1. Clean and slice squash, leeks and celery and add to boiling water. Add Vegeta Natur beef bouillon cube and cook about 10 minutes.
  2. Remove from heat and place in a blender, add celery leaves, and blend for several minutes.

Serving: Drizzle prepared soup with a few drops of pumpkinseed oil and sprinkle with pumpkin seeds and serve immediately.

Advice: You can replace leeks with onions.
