Marinated Chicken Skewers

Juicy chicken on skewers is a perfect choice for your picnic or garden party. Served with grilled zucchini and button mushrooms delicately flavoured with beer, they will look delightful and taste fabulous to your gourmet friends.

Marinated Chicken Skewers

Ingredients

  • 600 g boneless skinless chicken breasts
  • 1 Vegeta Grill Marinade with beer
  • 200 g fresh red pepper
  • 100 g zucchini
  • 100 g spring onions
  • 200 g large button mushrooms
  • 100 ml beer
  • 4 tbsp extra virgin olive oil
  • salt

Preparation

  1. Rinse and pat-dry the chicken breasts.
  2. Slice each chicken fillet lengthwise and then across to make 4 evenly sized pieces out of each fillet.
  3. Thread the chicken pieces on skewers, arrange them in a tray and pour Vegeta marinade with beer on top.
  4. Allow at least 30 minutes to marinate before grilling the chicken on charcoal or in a griddle pan.
  5. Slice and cut sweet peppers and zucchini into strips and grill the vegetables with button mushroom caps and spring onions.
  6. Sprinkle with a little beer during cooking.

Serving: Season the grilled vegetables with salt and olive oil, and serve with skewered chicken.

Advice: You can marinate and deep-fry the chicken if preferred.
